Whole Grain and Ancient Grain Breads (Spelt Bread)
Ingredients:
400g whole grain flour (spelt or any other ancient grain)
100g all-purpose flour
10g salt
7g instant yeast
350ml warm water
2 tbsp honey (optional)

2 tbsp olive oil
Step-by-step Instructions:

Combine Dry Ingredients:
In a large bowl, mix the whole grain flour, all-purpose flour, salt, and yeast.

Add Wet Ingredients:
Add the water, honey (if using), and olive oil. Stir until a dough forms.

Knead:
Turn the dough onto a lightly floured surface and knead for about 10 minutes, adding more flour if needed, until smooth.

First Rise:
Place the dough in a greased bowl, cover it, and let it rise for about 1-1.5 hours, or until doubled.

Shape the Dough:
Punch down the dough and shape it into a loaf. Place it in a greased loaf tin or shape it into a freeform loaf and place it on a baking sheet.

Second Rise:
Let the dough rise for another 30 minutes.

Bake:
the oven to 200°C (400°F). Bake for 25-30 minutes until golden and firm.
Cool:

Let it cool completely on a wire rack before slicing.
